Our Philosophy

Chef Marco Alvarez grew up between the fishing villages of Galicia and the produce markets of Lyon. That restless curiosity — for provenance, for texture, for the precise moment when an ingredient reaches its peak — defines everything that arrives at your table.

Our menu changes with the seasons, built around relationships with farmers, fishermen, and foragers who share our obsession. Nothing is wasted. Everything is considered.
